Hi Rachel, well done for trying crochet. It took me literally years to learn and I'll never prefer it to knitting but I have encountered most problems and received advice from a lot of people. I expect you are looking at Youtube tutorials and they are very useful, Some blogs give very clear tutorials - I could not make a granny square until I looked at the basic instructions on LittleTin Bird. I suppose hook size varies a bit depending on how tightly you crochet and the thickness of the yarn. When I first started I was advised to use a hook .5mm smaller than the knitting needle recommended for the yarn and that seems to work quite well for me although now I tend to use 4mm for most yarns. If the square worked up too small perhaps it needed a longer starting chain or you crochet very tightly.
You will get lots of help from very experienced ladies here - they certainly helped me.
If you go to the KAS Pattern book you will find a pattern for a basic crocheted Plain Jane square.
You may have to play a bit at first - size of the square will depend on hook size, yarn weight and your tension.
I chain 25 with a 5mm hook if using worsted weight yarn. For slightly thinner yarn I use a 4.5 mm hook and add a few chains to the foundation row.
It may take a few tries to figure out what works best for you.
