Here's an awesome crochet hat pattern that I've made lots of, Double-Double Crochet Hat.  If I'm totally focused, I can bang out a hat in less than an hour.  You can vary the yarn colors and combinations too, and make them look totally different -- variegated throughout, solid rainbow stripes, the sky's the limit!

 

The pattern as written makes a big girl's/ladies hat.  For a child's hat, I think I worked rows 1-3 as written, and then skipped to row 5, with no more increases. You can add an extra row or two, so they can roll up the brim, or just have it a bit longer to be sure their ears are well covered.

 

For a big guy/man's hat, I would follow the directions as is, but use a size M crochet hook -- that worked better for me, rather than adding rows and additional stitches around (mine came out too loose for my husband's head, he was my guinea pig, lol!).

This is a great way to use two or three thinner yarns or for extra thickness three worsted yarns. I love anything that works up quick. Thanks so much, I've printed this one off. And thanks for the tip about the man's sizing as many older boys need warm hats.
