Everyone loves to bake at Christmas.

How about sharing our goodies with the children?

Wouldn’t it be nice to be able to make a pan of cookies, decorate a plate of fancy cupcakes, or lift a Christmas cake out of the oven and send them off to Ronda to distribute to the children? Of course, we can’t do that, but we can bake a virtual Christmas treat!

For any of you who have ever made one, you know that fruitcake is expensive to make. But if we all chip in, we can do it! Here is a recipe that Gloria Grandy often made years ago to divide into smaller cakes and gave as Christmas gifts to friends. Let’s make a huge one for the children and for Ronda and her team in SA!

Simply choose an ingredient – or more than one ingredient if you like – and purchase it for $5 each cup, teaspoon or tablespoon. Send that amount to Ronda to help her meet the mounting cost of distributing our love to the children. Be sure to let us know in the discussion below which ingredient(s) you purchase so we don't end up with too much flour or not enough eggs!

When the fruitcake is complete, we'll pick another recipe to make, so feel free to also suggest one that uses a lot of ingredients. Whether it's a cup of flour or an egg, every little bit helps. Let's get baking!

Dark Fruitcake
2 cups brown sugar
2 cups cream
1 1/2 tsp. baking soda
Lemon
Vanilla
1 cup strong coffee
4 cups flour
1 cup molasses or strawberry jam
2 cups dates
3 cups currants
9 cups raisins
4 tbsp. shortening
6 eggs
2 cups mixed fruit
1 1/2 cups red cherries
1 can crushed pineapple
1/2 tsp. salt
1 tsp. cinnamon
1/2 tsp. cloves
1/2 tsp. allspice
1/2 tsp. nutmeg
1/2 tsp. ginger
2 cups mixed nuts

  • Fruitcake can make dogs very sick (although a friend of mine had a German Shorthair who swiped a whole cake off the counter and devoured the whole thing with no ill effects).
